Brew espresso
Pull two fresh shots of espresso (about 60 ml total). If you don't have an espresso machine, use strong brewed coffee concentrated to espresso strength (≈60 ml). Let the espresso sit for 30–60 seconds to slightly cool so it won't melt the ice immediately.
Prepare glass
Fill an 8 oz serving glass with ice cubes (about 1 cup). Using plenty of ice chills the beverage quickly and keeps it from becoming diluted too fast.
Combine
Pour the cold water over the ice in the glass. Add the simple syrup (15 ml) if you want sweetness. Pour the slightly cooled espresso shots over the ice and water.
Adjust and finish
Stir gently with a bar spoon to combine the espresso, water, and syrup. Taste and, if desired, add milk or cream (30 ml) for a creamier texture or an extra 5–10 ml of simple syrup if you prefer sweeter. Stir again to incorporate.
