Preheat and prepare

Preheat your Belgian waffle iron according to manufacturer instructions. Lightly brush or spray with oil if required.

Mix dry ingredients

In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk 2 large eggs until blended. Add 1 3/4 cups whole milk, 1/2 cup melted unsalted butter (cooled slightly), and 1 teaspoon vanilla extract. Whisk until smooth.

Make batter

Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Small lumps are fine; do not overmix. Let batter rest 5–10 minutes to hydrate the flour and allow baking powder to begin activating.

Cook waffles

Once the waffle iron is hot, pour the recommended amount of batter for your iron (usually 1/2 to 3/4 cup for standard Belgian size) onto the center of the plates. Close and cook until golden brown and crisp, about 3–5 minutes depending on your iron. Transfer cooked waffles to a wire rack set over a baking sheet in a warm oven (200°F/95°C) to keep crisp while you make remaining waffles.

Prepare chocolate ganache

Place 8 oz semisweet or dark chocolate chips in a heatproof bowl. In a small saucepan, bring 2 tablespoons heavy cream to a simmer (do not boil). Pour the hot cream over the chocolate and let sit for 1 minute to soften, then gently stir until smooth and fully combined. Add 1 teaspoon unsalted butter and 1 teaspoon neutral oil if you want a glossier, slightly thinner coating; stir until glossy. If ganache is too thick to dip, warm very briefly over a double boiler or microwave in 5–8 second bursts, stirring between each until pourable but not hot.

Dip waffles

Working one waffle at a time, hold the waffle by the edge or place it flat and use a spatula to spread/dip about half to two-thirds of the waffle surface into the warm ganache. Allow excess to drip off for 5–10 seconds, then transfer to a wire rack. For a fully dipped edge, tilt to catch drips along the sides. If coating sets unevenly, warm ganache slightly and re-dip quickly.

Finish and garnish

While ganache is still tacky, optionally sprinkle a light dusting of 1 tablespoon confectioners' sugar or 1/8 teaspoon fine sea salt over the chocolate for contrast. Add fresh berries, a dollop of whipped cream, or a sprinkle of toasted chopped nuts as desired. Let dipped waffles sit at room temperature until chocolate firms (about 10–20 minutes) or place in the refrigerator for 5–10 minutes to set faster. Serve warm or at room temperature.

Plating & Serving

Stack waffles 1–2 high on plates or serve individually. Add whipped cream and berries to the side or on top. If storing leftovers, keep undipped waffles in an airtight container at room temperature for up to 1 day or freeze for up to 1 month. Dipped waffles are best consumed the same day to preserve texture.
