Make compote
Place 1 cup blueberries, 2 tsp sugar and 2 tbs water in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer. Cook, stirring occasionally, until berries burst and mixture thickens slightly, about 6–8 minutes.
Mash the berries lightly with the back of a spoon or a fork to release juices and create a chunky compote. Stir in 1/2 tsp lemon zest and 1 tsp lemon juice (from yogurt base ingredient) if more brightness is needed. Remove from heat and cool to room temperature; it will thicken further as it cools.
Blueberry Yogurt Base
Combine yogurt and flavorings
In a medium mixing bowl, add 3 cups plain Greek yogurt. Whisk in 3 tbs honey, 1 tsp vanilla extract and 1 tsp fresh lemon juice until smooth and evenly sweetened. Taste and adjust sweetness with more honey if desired.
Fold in fresh blueberries
Gently fold 1.5 cups fresh blueberries into the yogurt mixture, reserving a few whole berries for garnish if you like. Folding keeps berries intact and distributes them evenly.
If using the blueberry compote, swirl 1/3–1/2 cup of the cooled compote into the yogurt for ribbons of jammy blueberry, leaving some compote for topping. Combine gently until marbled—do not fully mix if you want streaks.
Cover and chill the prepared blueberry yogurt for at least 30 minutes in the refrigerator to let flavors meld. It can be refrigerated up to 24 hours; if it separates slightly, stir before serving.
Assembly & Toppings
Serve immediately for best texture, or keep chilled until ready to eat. Leftovers stay fresh refrigerated for up to 3 days (add crunchy toppings just before serving).
