Prepare fruit

Peel and chop
If using fresh peaches, blanch for 30–60 seconds in boiling water then transfer to ice water to loosen skins. Peel, pit, and chop enough peaches to yield about 1.5 cups. Reserve one thin slice for garnish.

If you have very ripe peaches, use a mix of fresh and frozen (1.5 cups fresh + 0.5 cup frozen) to achieve a thick, cold smoothie without watering it down.

Add ingredients to blender
Place the chopped peaches, frozen peaches, 1/2 cup Greek yogurt, 1 cup almond milk, 1 tablespoon honey (or maple syrup), and 1 teaspoon lemon juice into a blender.

Optional: Add 1 teaspoon ground flaxseed or chia for fiber and 1/4 teaspoon vanilla extract for extra flavor. Do not add both ice and extra frozen fruit unless you want a very thick texture.

Pulse and adjust
Start blending on low, then increase to high and blend until smooth, about 30–60 seconds depending on blender power. If the smoothie is too thick, add up to 2 tablespoons more almond milk and blend briefly. If too thin, add a few ice cubes or an extra 1/4 cup frozen peaches and blend again.
