Prepare the Steak

Take the rib steak out of the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels.

Season the Steak

Generously season both sides of the steak with kosher salt and freshly ground black pepper, pressing the seasoning into the meat.

Preheat the Pan

Heat a cast-iron skillet or heavy pan over medium-high heat. Add the olive oil and let it heat until shimmering.

Sear the Steak

Add the rib steak to the hot skillet and sear for about 4-5 minutes on each side for medium-rare, adjusting the time for desired doneness.

Add Aromatics

In the last 2 minutes of cooking, add crushed garlic, fresh thyme, and butter to the pan. Baste the steak with the melted butter and aromatics.

Rest the Steak

Remove the steak from the skillet and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute.

Serve

Slice against the grain and serve with your choice of sides.
