    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.

    Make the filling

    In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add the remaining 0.5 cups of granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed after each addition. Finally, add the flour and mix until just combined.

    Bake the cheesecake

    Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggles when shaken. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.

    Chill and serve

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Before serving, run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan. Slice and serve chilled.
