Prepare Sushi Rice

Cook Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool.

Season Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled rice. Set aside.

Prepare Tempura Tamago

Make Batter

In a bowl, whisk together the eggs, flour, water, and salt until smooth.

Fry Tamago

Heat vegetable oil in a frying pan over medium heat. Pour a small amount of batter into the pan and cook until golden brown on both sides. Repeat until all batter is used. Set aside.

Assemble the Roll

Prepare Fillings

Slice the fresh salmon and avocado into thin strips.

Roll Sushi

Place a sheet of nori on a bamboo mat. Wet your hands to prevent sticking, and spread a thin layer of sushi rice over the nori. Lay down the salmon and avocado in the center. Roll tightly using the mat.

Add Tempura Tamago

Slice the tempura tamago into strips and place on top of the rolled sushi. Optionally, drizzle with soy sauce.

Serve

Slice and Serve

Using a sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger.
