Method
Prep Asparagus
Wash the asparagus and pat dry. Trim the woody ends: hold each spear and bend until it snaps naturally or trim the bottom 1–1½ inches with a knife so all spears are similar length.
If spears are very thick, shave the thicker end slightly with a vegetable peeler to improve cooking evenness.
Make Tempura Batter & Dusting
Chill a medium bowl in the refrigerator for 5 minutes or put a bowl over ice. Keep the ice water very cold throughout — cold water helps create a light, crispy batter.
In a separate small bowl, beat the large egg lightly. Add the ice water to the beaten egg and stir to combine.
In the chilled bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and ground white pepper until evenly distributed.
Pour the cold egg-water mixture into the dry ingredients. Using chopsticks or a fork, mix briefly until just combined — a few lumps are fine. Do not overmix; overworked batter will become heavy. Keep the batter on ice or in the refrigerator until ready to use.
Put the rice flour or extra cornstarch in a shallow plate. Lightly dust each asparagus spear with the rice flour/cornstarch, tapping off excess. This helps the batter cling.
Heat Oil
Pour oil into a deep pot or heavy-bottomed pan to a depth of about 2–3 inches (enough to fully submerge most spears). Heat over medium-high until a thermometer reads 350–375°F (175–190°C). If you don’t have a thermometer, test by dropping a little batter into the oil — it should sizzle and float to the surface immediately, turning pale golden in 30–45 seconds.
Fry Asparagus
Working in small batches (3–4 spears at a time depending on pan size), hold an asparagus spear by the tip and dip it into the batter, coating evenly. Let excess batter drip off for a second so coating is light.
Carefully lower the battered spear into the hot oil. Fry 3–4 spears at once so oil temperature remains steady. Fry for 2–3 minutes, turning once if needed, until batter is crisp and pale golden. Thicker spears may take up to 4 minutes.
Use a slotted spoon or spider to lift the spears and drain briefly on a wire rack set over a baking sheet or on paper towels. For best crispness, transfer to a warm oven (200°F / 95°C) while you finish remaining batches to keep them crisp and hot.
Make Dipping Sauce (Optional)
Combine Sauce
In a small saucepan, combine soy sauce, mirin, dashi (or water), and sugar. Warm gently over low heat, stirring until the sugar dissolves. Remove from heat and stir in grated ginger and sliced scallion if using. Serve warm or at room temperature in small bowls.
Finish & Serve
Sprinkle fried tempura asparagus lightly with fine sea salt or flaky salt immediately after frying.
Leftovers will lose crispness; to re-crisp, place on a wire rack in a 350°F (175°C) oven for 5–8 minutes.
