Preheat and prepare

Preheat the oven to 400°F (200°C). Lightly grease a 6-cup muffin tin or line with nonstick spray.

Prepare potatoes

Wash and peel the russet potatoes. Using a box grater or food processor with a shredding disk, shred the potatoes. Immediately place shredded potatoes in a bowl of cold water and swish to remove excess starch. Drain and then press or squeeze the potatoes dry using a clean kitchen towel or paper towels until mostly dry.

Season shredded potatoes

In a bowl, toss the dried shredded potatoes with 2 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and the grated Parmesan if using. Mix thoroughly so oil and seasonings coat evenly.

Form baskets

Divide the seasoned shredded potatoes evenly among 6 muffin cups. Press the potatoes along the bottom and up the sides to create a basket shape with a hollow center for filling. Pack them firmly so they hold their shape.

Bake baskets

Bake on the middle rack for 30–35 minutes until the edges are golden brown and crisp. If bottoms are not fully crisped after 35 minutes, broil 1–2 minutes watching carefully. Remove from oven and let cool slightly in the pan, then transfer to a wire rack to cool while you prepare the filling.

Prep vegetables

While the potato baskets bake, dice the onion, eggplant, zucchini, and bell peppers. Chop the tomatoes if using fresh and mince the garlic.

Sweat onion and garlic

Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium heat. Add the diced onion and sauté for 4–5 minutes until translucent. Add the minced garlic and cook 30–45 seconds until fragrant.

Cook vegetables

Add the diced eggplant to the pan and cook 5–7 minutes, stirring occasionally, until it begins to soften and brown. Add the diced zucchini and bell peppers and cook another 5 minutes until vegetables are tender-crisp.

Add tomatoes and seasonings

Stir in the chopped tomatoes (or crushed tomatoes), 1 tablespoon tomato paste, 1 teaspoon dried thyme, 1 teaspoon dried oregano, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon sugar if using. Reduce heat to low and simmer gently for 8–12 minutes until sauce thickens and flavors meld.

Finish with basil

Stir in the fresh basil (or dried basil) and adjust seasoning to taste. If the mixture is too watery, increase heat briefly to reduce until desired consistency is reached. Remove from heat and let cool slightly before filling baskets.

Assemble & serve

Fill baskets

Spoon the warm ratatouille into each potato basket, dividing evenly. Fill each basket generously but leave a little space to add a finishing cheese if desired.

Add cheese and garnish

If using goat cheese or ricotta, add about 1–2 tablespoons into each filled basket or dollop on top. Sprinkle chopped fresh parsley and a little lemon zest over each. Optionally, return filled baskets to oven for 5 minutes to warm cheese slightly.

Serve

Serve the ratatouille potato baskets warm as an appetizer, side, or light main. These make 6 servings. Leftovers can be refrigerated up to 3 days; reheat in a 350°F (175°C) oven for 10–12 minutes to crisp the potato again.
