Method
Prep
- 1
Rim glass
Pour the Tajin onto a small plate. Rub the rim of a rocks glass or coupe with a lime wedge, then dip the rim into the Tajin so it is evenly coated. Set the glass aside to dry briefly.
- 2
If you don't have Chili Peppa Wata, make a quick chili syrup by combining equal parts sugar and water with sliced fresh chiles; simmer 2–3 minutes, steep 10 minutes, strain and cool. Use chili syrup in the recipe.
Build & shake
- 3
Add ice to a cocktail shaker until about two-thirds full.
- 4
Pour in the blanco rum (or vodka), Giffard pink grapefruit liqueur, fresh lime juice, and Chili Peppa Wata (or chili syrup). If you want a sweeter drink, add the optional 0.25 oz simple syrup.
- 5
Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.
Serve
- 6
- 7
If desired, top with 1 oz club soda for a slightly longer, fizzy version and gently stir once to combine.
- 8
Garnish with a small grapefruit wedge or a couple of grapefruit segments on a pick. Optionally, sprinkle a tiny pinch of Tajin over the top for an extra hit of chile-lime seasoning.
- 9
Serve immediately.
