Cook the curd

In a medium heavy-bottomed saucepan, whisk together 1 cup fresh lemon juice, 2 tbs lemon zest, 1 cup granulated sugar, and 4 large eggs until smooth and uniform in color.

Place the saucepan over medium-low heat and cook, stirring constantly with a silicone spatula, scraping the bottom and sides to prevent curdling. Cook until the mixture thickens and registers about 170–175°F (it will coat the back of the spatula) — about 8–12 minutes.

Remove from heat and immediately whisk in 8 tbs (1 stick) unsalted butter, cut into pieces, one piece at a time until fully incorporated and smooth. Stir in a pinch of salt. If desired, strain the curd through a fine mesh sieve into a bowl to remove any cooked egg bits and extra zest for a silky texture.

Cover the surface with plastic wrap to prevent a skin from forming and cool to room temperature; then refrigerate until fully chilled, at least 1 hour (curd will continue to thicken as it chills).

Chiffon Cake (prepare and assemble)

If using a whole chiffon cake, cut into 1-inch cubes until you have about 6 cups of cubes. If desired, make a quick simple syrup by boiling equal parts water and sugar (not listed separately) or use a store-bought syrup. Cool syrup before using.

Optional: Lightly brush cake cubes with 1 tbs simple syrup mixed with 2 tsp lemon liqueur or orange juice to add moisture and lemon flavor. This is especially useful if cake is slightly dry.

Seasonal Fresh Fruit

Prepare the fruit: hull and quarter strawberries, rinse and drain blueberries, peel and slice kiwi, and slice peaches or nectarines if using. Pat fruit dry on paper towels to avoid excess moisture in the trifle.

If fruit is very tart or not sweet enough, toss fruit gently with 1–2 tsp granulated sugar and let sit 10 minutes, then drain any released juice.

Chantilly Cream

Chill a metal mixing bowl and beaters for 10–15 minutes in the refrigerator for best whipping results.

Pour 2 cups cold heavy cream into the chilled bowl. Add 4 tsp confectioners' sugar and 1 tsp vanilla extract. Whip on medium-high speed until soft to medium peaks form, about 2–4 minutes depending on your mixer. Do not overbeat — stop when cream holds shape but is still silky.

Fold in 1 tsp lemon zest gently if you want a subtle lemon note in the cream.

Assembly

Choose a clear trifle bowl or individual serving glasses. Start with a single layer of chiffon cake cubes (about 1 to 1 1/2 cups for a large trifle or 1/2 cup per individual).

Spoon or pipe a generous layer of chilled lemon curd over the cake layer (about 3/4 cup for the large trifle; less for individual portions). Spread evenly but leave some texture.

Add a layer of mixed seasonal fruit (about 1 to 1 1/2 cups total). Distribute colors evenly for visual appeal.

Add a layer of Chantilly cream (about 1 cup). Smooth or leave soft peaks for texture contrast.

Repeat layers once more: cake, lemon curd, fruit, and finish with a final layer of Chantilly cream. For a 6-cup cake use 2–3 layers depending on bowl height.

Use remaining lemon curd in a small bowl to drizzle over the top if desired, or reserve for serving.

Cover and refrigerate the assembled trifle at least 2 hours (preferably 4 hours) to allow flavors to meld and cake to soften slightly. Do not refrigerate longer than 24 hours for optimal texture.

Garnish and Serve

Before serving, garnish the trifle with candied lemon slices or thin fresh lemon wheels and mint leaves. Sprinkle a few berries on top for color. If you reserved extra lemon curd, dot small spoonfuls on top for visual interest.

Scoop or spoon portions into bowls or serve with a cake server for family-style. Serve chilled. Leftovers keep refrigerated up to 48 hours; cream and cake may soften further.
