Spiced Cider Base
Prepare whole spices
Bundle the cloves, allspice berries, and one cinnamon stick in a small piece of cheesecloth and tie with kitchen twine (or use a small spice ball). This makes removal easy and prevents loose spices in the drink.
Heat cider
In a medium saucepan combine the apple cider, water, brown sugar, sliced ginger, orange peel, and the spice bundle. Add the remaining cinnamon stick whole to the pot. Stir to dissolve the sugar over medium heat.
Simmer
Bring the mixture to a gentle simmer (do not boil) then reduce heat to low. Simmer, partially covered, for 12–15 minutes to allow the spices and citrus to infuse the cider.
Taste and adjust
Remove from heat. Taste the cider and, if desired, stir in an additional 1/2–1 tablespoon brown sugar for more sweetness or a splash more water if too intense. Remove and discard the spice bundle, ginger slices, orange peel, and cinnamon stick.
Spirit & Finish
Divide the hot spiced cider between four heatproof mugs (about 1¼ cups each). Add 1½ tablespoons (approximately) of Tuaca to each mug, plus ¼ teaspoon fresh lemon juice per mug. Stir gently to combine.
Optional warming: If you prefer a slightly stronger warmed spirit presence, briefly return the combined cider and Tuaca to low heat for 1–2 minutes — do not boil — then remove from heat before topping.
Sprinkle a light dusting of ground cinnamon over each mug just before adding whipped cream.
Whipped Cream Topping
Make whipped cream
Chill a mixing bowl and beaters for a few minutes if possible. Pour the heavy cream into the bowl. Add powdered sugar, vanilla extract, and nutmeg. Whip with a hand mixer (or whisk) until soft peaks form, about 2–3 minutes. Do not overwhip; you want a pillowy texture that will float on the hot cider.
Top each mug of hot cider and Tuaca with a generous dollop of freshly whipped cream. Garnish with an extra pinch of ground cinnamon or a small cinnamon stick if desired. Serve immediately while hot.
