Fruit Prep
Wash and dry
Rinse all fruits under cold water and pat dry with a clean towel. Remove any stems or leaves from berries and grapes; dry them thoroughly so they don't make cheeses soggy.
Slice apples and pears
Core the apple and pear. Slice each into 6–8 thin wedges about 1/4 inch thick. If not serving immediately, toss slices lightly with juice from 1/2 lemon to prevent browning and set aside on a plate.
Prepare stone fruit
If using peaches or nectarines, halve and remove the pit, then slice into 6–8 wedges. Arrange with other sliced fruit.
Prepare grapes and berries
Keep grapes on small clusters for easy picking, or remove from stems and place loosely in a small pile. Hull strawberries and halve or quarter larger berries for easier eating.
Cheese Prep
Bring cheeses to serving temperature
Remove cheeses from the refrigerator 30–45 minutes before serving so flavors and textures open up. Soft cheeses like Brie will soften and become more aromatic.
Slice and present
Place each cheese on the board with space between types. For Brie, serve whole with a small knife to cut wedges. Pre-slice the cheddar into 1/4-inch slices or 1/2-inch cubes for easy serving. For firm or blue cheese, cut into small wedges. Label cheeses if desired.
Accoutrements & Assembly
Arrange crackers and bread
Fan crackers or sliced baguette on one area of the board. Keep them accessible and partially overlapping for a pleasing look.
Place fruits and cheeses
Arrange cheeses at 3–4 anchor points on the board. Fill spaces between cheeses with grouped fruits: clusters of grapes, small piles of berries, and artfully fanned apple/pear/stone fruit slices. Vary color and shape to create visual interest.
Add nuts, honey and jam
Put nuts into a small pile or a bowl. Place honey and jam in small bowls and set near cheeses that pair well (honey near blue cheese or Brie; fig jam with cheddar). Provide spoons for the bowls.
Garnish and final touches
Tuck a few fresh herb sprigs around the board for aroma and color. Ensure each cheese has an appropriate knife and that crackers/bread are near compatible cheeses. Wipe any sticky spots and serve immediately.
Serving Suggestions
Serve the plate at room temperature with small plates and napkins. Suggest pairing options such as a light white wine, sparkling wine, or a dry rosé. Replenish fruit, crackers and nuts as needed during service.
