Chill flute

Place a champagne flute in the freezer or fill it with ice water to chill while you prepare the cocktail.

Combine cocktail ingredients

In a cocktail shaker, add Empress Gin (2 tbs), fresh lemon juice (0.75 oz), simple syrup (0.5 oz), and 2 dashes Jamaican bitters.

Add ice and shake

Add enough ice to fill the shaker (about 1 cup). Seal and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain into flute

Discard the ice or water from the chilled flute. Double-strain the shaken mixture into the chilled champagne flute to remove small ice shards and pulp.

Top with sparkling wine

Slowly top the flute with about 3 oz of chilled Brut or dry sparkling wine. Pour gently down the side to preserve effervescence and to create an elegant layered look with the gin's violet hue.

Add bitters finish

If desired, add an extra small aromatic accent by floating 1 additional dash of Jamaican bitters on top of the finished cocktail (it will sink and produce a fragrant note).

Garnish & serve

Express the oils of a lemon twist over the cocktail by pinching it skin-side down above the flute, then rim the glass lightly with the peel and drop the twist into the drink (or place a lemon wheel on the rim).

Optionally, place an edible flower on the surface for visual flair. Serve immediately while sparkling wine is lively.
