Mango Purée
Prepare mango
Peel and dice ripe mango until you have about 1 1/4 cups of flesh. Use firm-ripe mangoes for best flavor and aroma.
Place diced mango, 1 tsp fresh lime juice, 1 tsp simple syrup (or agave), and 1/8 tsp fine sea salt into a blender or food processor. The lime brightens the mango while the salt enhances sweetness.
Pulse or blend on medium speed until very smooth, about 20–30 seconds. Scrape down the sides and blend another 10–15 seconds if needed to reach a silky purée with no large fibers.
Taste the purée and adjust: add another 1/2 tsp simple syrup if not sweet enough, or a few drops more lime if it needs brightness. Chill in the refrigerator for at least 10 minutes if not using immediately (cool purée helps preserve Prosecco fizz).
If you prefer an extra-smooth texture, press the purée through a fine-mesh sieve into a bowl, discarding fibers. This is optional but gives a refined mouthfeel.
Assembling the Bellini
Chill a champagne flute in the refrigerator for at least 10 minutes. Well-chilled glass preserves bubbles and gives a better drinking experience.
Spoon 2 tablespoons (about 30 ml) of the mango purée into the bottom of the chilled flute for a single serving. For a slightly stronger fruit presence, use up to 3 tablespoons (45 ml).
Hold the flute at a slight angle and slowly pour 3/4 cup (about 180 ml) well-chilled Prosecco down the side to preserve bubbles and encourage gentle mixing. Pouring slowly reduces overflow and retains effervescence.
If making more than one serving, keep extra Prosecco chilled and add gradually, topping each flute individually. Reserve up to 1/2 cup extra Prosecco for topping or guests who want a slightly drier drink.
Garnish & Serve
Garnish the rim with a thin mango slice or a twist of lime. Optionally add a small mint sprig for aroma.
Serve immediately while the Prosecco is lively and effervescent. Recommend one serving per guest.
