Prepare equipment
If using a home cotton candy machine, assemble and preheat it according to the manufacturer's instructions. If making spun sugar by hand, line a large rimmed baking sheet with parchment and dust lightly with powdered sugar; set up several paper cones or sticks nearby.
Combine and dissolve
In a medium heavy-bottomed saucepan, combine 2 cups granulated sugar, 2 tablespoons light corn syrup, 1 tablespoon water, and a pinch of fine salt. Stir over low heat just until the sugar is evenly moistened and the syrup begins to dissolve (do not boil yet).
Cook to hard‑crack
Increase heat to medium-high and bring syrup to a boil without stirring. Use a candy thermometer clipped to the side and cook until the temperature reaches 300°F (149°C) — the hard‑crack stage. This typically takes 10–12 minutes. Watch closely to prevent burning; you can gently brush down crystallized sugar on the sides with a wet pastry brush if needed.
Cool slightly
Remove the pan from heat and let the syrup sit undisturbed for about 30–60 seconds so large bubbles subside and the temperature drops slightly (to around 280–295°F / 138–146°C).

Stir in 1 teaspoon of your chosen flavored extract and 2 drops of food coloring quickly but carefully (the syrup will be extremely hot). Work with oven mitts and a long-handled spoon or heatproof spatula. Mix just until color and flavor are evenly combined.
Optional portioning
If you want two colors/flavors, divide the hot syrup into two heatproof bowls (be very careful) and add separate extracts or colors to each bowl, using 1/2 teaspoon extract and 1–2 drops color per portion.

Spin with a machine
If using a cotton candy machine: pour a small amount of the flavored syrup into the heated center spinner head per the machine instructions (usually a tablespoon or less). Turn the machine on and allow sugar to form threads and collect on the bowl. Capture threads with a paper cone or stick by rotating the cone around the inner rim and gathering the strands, building a fluffy cone. Repeat until sugar is used or cones are filled. Allow machine to cool between different colors.
Hand‑spun sugar method
If making spun sugar by hand: allow the syrup to cool until it forms thick threads when flicked. Dip the prongs of two forks or a clean whisk into the syrup, then flick the syrup back and forth over the prepared, powdered-sugar-dusted parchment to create fine sugar threads. Quickly gather threads onto a paper cone or stick by rolling and rotating the cone through the web of threads until a fluffy puff forms. Work in small batches so the sugar doesn't harden into lumps.
Finish and store
Dust the finished cotton candy very lightly with powdered sugar if you like to reduce stickiness. Serve immediately for the best fluffy texture; cotton candy will deflate and become sticky as it absorbs moisture. If storing briefly, place in an airtight container or plastic bag and keep in a cool, dry place for up to 4–6 hours, but expect loss of loft.
