Make chocolate ganache

Place the chopped bittersweet chocolate in a heatproof bowl. In a small saucepan, warm the heavy cream until it just begins to simmer (do not boil). Pour the hot cream over the chocolate and let sit 1 minute, then whisk gently from center outward until smooth and glossy. Whisk in the unsalted butter, powdered sugar, vanilla extract and a pinch of sea salt until fully incorporated. Reserve about 50 ml ganache for drizzling. Let the rest cool slightly to thicken, about 10–15 minutes at room temperature.

Prepare buns

Slice the mini buns horizontally. Lightly toast cut sides in a dry skillet over medium heat for 30–60 seconds until lightly browned and warmed. Allow to cool slightly.

Assemble chocolate burger

Spread a thin layer of the slightly cooled ganache on the bottom halves of the buns. Dust the top of each bottom bun with a little unsweetened cocoa powder (use a fine sieve).

Vanilla Ice Cream 'Patty'

Form ice cream patties

If desired, stir the slightly softened vanilla ice cream with 1 tsp cornstarch to help stabilize. Using a 2.5–3 inch round cookie cutter or an ice cream scoop, portion ice cream into 8 small patties that match the bun diameter. Smooth edges and place each patty on a parchment-lined tray. Freeze the patties at least 1 hour (ideally 2 hours) until firm.

Finish burger assembly

Place a frozen ice cream patty onto each ganache-spread bottom bun. Spoon a tablespoon of ganache onto the ice cream as a 'melted sauce' layer, then top with the bun top. Insert a mini wooden pick through the center to hold the slider if desired. Return assembled sliders to the freezer for 15–20 minutes to set before serving.

Root Beer Float (Mini)

Chill small glasses or short tumblers. For each mini float, add one generous small scoop (about 30 ml) of vanilla ice cream to the glass, then slowly pour 60 ml chilled root beer over the ice cream to avoid excessive foaming. Serve immediately with a straw and top with a maraschino cherry if using. Make four mini floats (total root beer 240 ml used if serving 4; recipe quantities allow for seconds).

Mango Fries with Citrus Chili Dust

Cut mango fries

Cut each peeled mango into long thick sticks (like French fries), about 1–1.5 cm thick. Pat dry with paper towel to remove excess juice so dust will adhere.

Season

In a small bowl combine lime juice, granulated sugar, chili powder, tajín and sea salt. Toss mango fries gently in the mixture so each piece has a light coating. Let rest 2–3 minutes to allow flavors to meld.

Arrange mango fries on a small platter alongside the chocolate burger sliders for a sweet-tangy contrast. Serve immediately so mango retains fresh texture.

Before serving, drizzle the reserved 50 ml chocolate ganache over the tops of the assembled chocolate burgers (warm ganache slightly if too firm). Dust lightly with extra cocoa powder if desired. Plate two chocolate burger sliders per person with a small bowl or pile of mango fries and one mini root beer float.
