Ensure each draft selection has been properly chilled to its recommended serving temperature (typically 38–55°F / 3–13°C depending on style). Choose five distinct styles to showcase contrast (light to dark or hop-forward to malt-forward).

Chill and select beers

Place five clean 4-oz tasting glasses on the flight paddle or tray. If using a printed tasting notes card, place it beneath or beside the corresponding glass positions so guests can identify each pour.

Prepare glassware and flight paddle

Before pouring each sample, briefly purge the tap to remove excess foam and any residual beer from the line. If desired, quickly rinse each tasting glass with a small splash of the same beer to help maintain head and aroma (optional).

Purge and rinse taps

Using a measuring cup or by eye, pour 4 oz (approximately 120 ml) of the first beer into the first tasting glass. Pour gently at a 45-degree angle to reduce excessive foam, then straighten the glass near the end to form a small head (about 1/4" to 1/2"). Repeat for beers 2 through 5, working from lightest to heaviest (or according to the planned tasting order) to avoid flavor carryover.

Measure 4-oz pours

Place the filled glasses back on the flight paddle in the intended tasting order. Ensure the tasting notes card or labels correspond correctly to each glass position.

Arrange and label

Deliver the flight paddle to the guest with the tasting notes card visible. Recommend tasting from left to right (or from lightest to darkest) and sipping in small increments to compare aroma, flavor, mouthfeel, and finish.

Present the flight

Offer the 8 oz of water and optional unsalted crackers to cleanse the palate between samples. Suggest rinsing with water between particularly strong or highly hopped pours.

Provide palate cleansers

Advise guests to consume samples within 10–15 minutes for best aroma and carbonation. If any beer is heavily oxidized or off, remove and replace it promptly.

Safety and freshness

After service, empty and rinse tasting glasses, wash with beer-safe detergent, and sanitize if required. Drain and clean the flight paddle as needed.
