Temper cheeses
Remove all cheeses from refrigeration 30–60 minutes before serving and keep them covered. This allows flavors and textures to open up.
Trim rind where appropriate (for Brie, keep rind intact; for Manchego or cheddar, cut into a mix of slices and bite-sized wedges). Arrange cheeses spaced apart on the board so there is room for accompaniments.
Fruit & Garnishes
Wash and dry grapes and berries. Pat figs or pear slices dry and halve or thinly slice. Keep similar fruits together to create color blocks on the board.
Scatter toasted nuts in small piles around the board. Place honeycomb piece on a small dish or directly on the board in an area adjacent to soft cheeses so guests can pair easily.
Tuck rosemary sprigs among cheeses and fruit for aroma and visual contrast.
Balsamic Reduction
Make balsamic reduction
Pour 1/2 cup balsamic vinegar and 1 tablespoon brown sugar into a small saucepan and bring to a gentle simmer over medium-low heat. Stir to dissolve sugar. Reduce to a low simmer and cook until mixture thickly coats the back of a spoon, about 8–12 minutes (target 3–4 tablespoons final yield). Watch closely to avoid burning.
Remove from heat and let cool slightly. The reduction will thicken more as it cools. Transfer to a small serving bowl or a squeeze bottle for drizzling.

Place cheeses first: put the largest cheese pieces on the board spaced apart. Add small dishes—one for balsamic reduction, one for honeycomb or place honeycomb directly on the board on a small piece of parchment to catch drips.
Fill in spaces with fruit, crackers, baguette slices, and nuts. Create visual balance by alternating colors and textures: cluster grapes to trail between cheeses, add berries near soft cheeses, and place fig or pear slices beside blue cheese.
Drizzle a small amount (about 1 tsp) of runny honey over the honeycomb or place the 3 tbs honey in a small ramekin. Lightly drizzle 1 tsp extra-virgin olive oil onto pear slices if desired and finish with a light sprinkle (about 1 tsp) of freshly cracked black pepper over the pears and honeycomb area.
Add cheese knives and spreaders near each cheese (soft cheese gets a spreader; hard cheese a firmer knife). Garnish the board with remaining rosemary sprigs for aroma.
Serve immediately at room temperature. Instruct guests to use separate knives for each cheese to avoid flavor crossover.
