Method
Coffee
Roast beans (optional)
If using green coffee beans to achieve the freshest roast, roast approximately 1 tablespoon of beans in a small pan over medium heat for 3–5 minutes until aromatic and slightly darkened; cool and coarsely chop. If using pre-roasted beans, skip this step.
Brew coffee
Brew 6 oz of strong hot coffee using your preferred method (French press, pour-over, or espresso). Aim for a slightly stronger extraction than usual so the liqueurs don't make the drink too weak. Keep coffee hot (around 160–170°F / 70–75°C).
Liqueurs & dairy
Warm the serving glass: pour a little hot water into a heatproof glass or mug, swirl and discard. This helps keep the drink warm longer.
Prepare rim (optional): mix the light brown or demerara sugar on a small plate. Wet the rim lightly with a few drops of coffee or a dab of butter, then dip the rim into the sugar to create a toasted-sugar rim.
Combine liqueurs: add 1 oz Frangelico, 1 oz Baileys Irish Cream, and 0.5 oz dark rum (if using) to the warmed glass.
Add coffee: pour 6 oz hot brewed coffee into the glass over the liqueurs, gently stirring once to combine. Allow the mixture to settle for 10–15 seconds.
Enrich and froth (optional)
For a richer mouthfeel, add a 1/4 teaspoon dab of unsalted butter to the hot drink and stir until melted. Alternatively or additionally, top with 2 tablespoons of softly whipped cream or frothed milk to create a creamy head.
Garnish & finishing
Top the drink: spoon the whipped cream or frothed milk gently onto the surface to form a small cap.
Finish with texture and aroma: sprinkle 1 teaspoon toasted chopped hazelnuts or walnuts over the cream, then grate a little dark chocolate or dust 1/4 teaspoon cocoa powder on top.
Serve immediately: present the Toasted Turtle hot with a small spoon. Encourage the drinker to stir the cream into the coffee for a velvety, toasted-hazelnut finish.
