Prepare glass
Select a tall tiki glass, Collins glass, or double old-fashioned glass. Fill the glass about three-quarters full with crushed ice to chill while you mix.
Combine ingredients
In a cocktail shaker or mixing tin, add the light (silver) rum, pineapple juice, orange juice, and coconut cream. Add a handful of crushed ice (about 1 cup) to the shaker.
Shake
Secure the shaker and shake vigorously for 10–15 seconds until the outside of the shaker feels cold and the ingredients are well combined and slightly frothy from the coconut cream.
Float dark rum
Carefully pour 1/2 oz dark rum over the back of a spoon held just above the drink so the rum floats on top, creating a layered look and richer aroma.
Garnish & finish
Grate a generous pinch (about 1/4–1/2 teaspoon) of fresh nutmeg over the top of the drink. Garnish with a pineapple wedge and an optional maraschino cherry on a cocktail pick.
Serve
Serve immediately with a straw and a long spoon for stirring if desired. Encourage guests to stir briefly to incorporate the float if they prefer a more uniform drink.
