Prepare and marinate crawdad tails

If using frozen crawdad tails, thaw thoroughly and pat dry with paper towels. Place tails in a bowl, add lemon juice, Kosher salt, black pepper, and hot sauce if using. Toss gently to coat and let sit 10 minutes while you prepare the other ingredients.

Vegetables & Aromatics

Heat a large skillet or sauté pan over medium-high heat. Add butter and olive oil. When butter is melted and oil shimmers, add the diced onion and red bell pepper. Sauté, stirring occasionally, until the onion is translucent and pepper is softened, about 5–7 minutes.

Stir in the minced garlic and diced tomato. Cook for 2–3 minutes until the garlic is fragrant and the tomato starts to break down.

Add the sliced scallions and cook 30–60 seconds, stirring to combine. Push the vegetables to the side of the pan to make space for the crawdad tails.

Seasoning & Finish

Increase heat to medium-high under the cleared space. Add the marinated crawdad tails in a single layer (work in batches if necessary to avoid overcrowding). Sear the tails undisturbed for about 1 minute, then stir them into the vegetables. Crawdads cook quickly; total cook time after adding to the pan should be 2–3 minutes until opaque and just cooked through.

Sprinkle the Creole seasoning, smoked paprika, and cayenne over the mixture. Stir to coat. Add the tomato paste and Worcestershire sauce, stirring to incorporate. Pour in the chicken or seafood stock and bring to a gentle simmer, scraping any browned bits from the bottom of the pan.

Taste and adjust seasoning: add the optional sugar if the tomatoes are too acidic, and adjust salt and pepper as needed. Cook the sauce down for 2–3 minutes until slightly thickened and glossy—do not overcook the crawdads.

Remove from heat and stir in the chopped parsley. Sprinkle additional scallions or parsley on top to garnish.

To Serve

Spoon the Creole crawdads and sauce over steamed rice or serve with crusty bread to soak up the sauce. Serve immediately with lemon wedges on the side for squeezing. Each serving gets a lemon wedge and a portion of rice or bread as preferred.
