Prepare glass
Chill a double old-fashioned glass (or tiki mug) by filling it with ice and cold water while you prepare the drink. Set aside.
Mix base
Discard the chilling ice and water from the glass. In a shaker, add aged dark rum (2 oz), fresh lime juice (0.75 oz), fresh pineapple juice (1 oz), orange curaçao (0.5 oz), orgeat (0.5 oz), simple syrup (0.25 oz) and 2 dashes Angostura bitters.
Add ice and shake
Fill the shaker with ice (enough to chill quickly) and shake vigorously for 12–15 seconds until well chilled and slightly frothy from the citrus and orgeat.
Prepare serving glass
Fill the chilled serving glass with crushed ice (about 1 cup).
Strain and float
Double-strain the shaken mixture over the crushed ice in the serving glass. Carefully pour 0.5 oz light or overproof rum over the back of a spoon to float it on top of the drink.
Garnish & finish
Garnish with a lime wheel and a sprig of mint. Optionally grate a small amount (a pinch, ~0.1 tsp) of fresh nutmeg over the top to add aromatic complexity.
Serve with a short cocktail pick for the garnish and a straw if desired. Advise caution with the overproof rum float—light before drinking for an extra theatrical touch, if appropriate.
