Wonton Preparation

Make the Filling
In a mixing bowl, combine ground pork, raw shrimp, chopped wood ear fungus, green onions, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.

Wrap the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Then, bring the two corners together to form a tortellini shape. Repeat with remaining wrappers and filling.

Prepare the Broth
In a large pot, combine chicken broth, sliced ginger, and minced garlic. Bring to a boil over medium-high heat.

Cook the Wontons
Once the broth is boiling, gently drop the wontons into the pot. Reduce the heat to medium and let them cook for about 5-7 minutes or until they float to the surface and are cooked through.

Season the Soup
Taste the broth and add soy sauce and white pepper to your liking. Stir well.

Serve the Soup
Ladle the soup into bowls, making sure to include some wontons in each. Garnish with chopped green onions before serving.
