Prepare the Eel

    Grill the Eel

    Preheat the grill to medium heat. Place the unagi pieces on the grill and brush them with unagi sauce. Grill for about 5-7 minutes on each side until they are cooked through and have a nice char.

Make the Tamago

    Whisk the Eggs

    In a bowl, whisk together the large eggs, soy sauce, mirin, sugar, and a pinch of salt until well combined.

    Cook the Tamago

    Heat a non-stick skillet over medium-low heat and add vegetable oil. Pour a small amount of the egg mixture into the skillet, tilting it to spread evenly. Cook until the edges start to set, then roll the omelet toward one side of the skillet. Add more egg mixture to the empty side and repeat until all the mixture is used. Remove from the skillet and let it cool before slicing.

Assemble the Dish

    Serve the Unagi Don

    In a bowl, place a serving of cooked rice. Top with grilled unagi pieces, sliced tamago, and a side of oshinko. Drizzle additional unagi sauce over the top if desired. Serve immediately.
