Cook the Udon Noodles
Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes until tender. Drain and set aside.

Prepare the Chicken
While the noodles are cooking, slice the chicken breast into thin strips and season lightly with salt and pepper.

Chop the Vegetables
Prepare the vegetables by slicing the bell pepper, julienning the carrot, and slicing the zucchini. Rinse and drain the bean sprouts.

Stir-Fry the Chicken
In a large wok or frying pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until cooked through, then remove from the pan and set aside.

Sauté the Vegetables
In the same pan, add another tablespoon of sesame oil. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Then add the bell pepper, carrot, zucchini, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Combine Noodles and Sauce
Add the cooked udon noodles and the cooked chicken back to the pan. Pour in the soy sauce and oyster sauce. Toss everything together for another 2-3 minutes until heated through and well combined.
Serving

Garnish and Serve
Remove the stir-fried udon from heat. Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds on top.
