Method

Preparing the Batter

  1. 1

    Mixing the Batter

In a mixing bowl, combine the all-purpose flour, dashi stock, eggs, soy sauce, baking powder, and salt. Whisk until smooth and there are no lumps.

Adding Fillings

  1. 2

    Incorporate Fillings

Add the cooked and diced octopus, chopped green onions, pickled ginger, and tempura scraps to the batter mixture. Stir gently to combine.

Cooking the Takoyaki

  1. 3

    Heat the Takoyaki Pan

Preheat your takoyaki pan over medium heat and lightly grease each mold with oil.

  2. 4

    Pouring the Batter

Pour the batter into each mold, filling them to the top. Allow the batter to cook for about 1-2 minutes.

  3. 5

    Turning the Takoyaki

Using a skewer or a takoyaki turner, carefully turn the balls to allow the uncooked batter to flow into the mold. Cook for an additional 3-4 minutes until golden brown and crispy.

Serving

  1. 6

    Add Toppings

Once cooked, remove the takoyaki from the pan and place them on a serving plate. Drizzle with takoyaki sauce and Japanese mayonnaise, then sprinkle with dried bonito flakes and aonori.

  2. 7

    Enjoy!

Serve your delicious takoyaki hot and enjoy with toothpicks or chopsticks.
