Cooking the Pasta

    Boil Water

    In a large pot, bring salted water to a boil over high heat.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the spaghetti in a colander and set aside, reserving a cup of pasta water.

Making the Meat Sauce

    Sauté Vegetables

    In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the onions are translucent, about 5 minutes.

    Brown the Meat

    Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 7-10 minutes.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pan to release any browned bits. Let it simmer for about 3 minutes until the wine reduces slightly.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, tomato paste, oregano, salt, and pepper. Bring to a simmer and let it cook for about 20-25 minutes, stirring occasionally.

    Combine with Spaghetti

    Add the drained spaghetti to the sauce and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

    Serve

    Serve hot, topped with grated Parmesan cheese and chopped fresh basil.
