Method

Preparation of Scallops

  1. 1

    Clean the Scallops

Rinse the fresh scallops under cold water and pat them dry with paper towels. Remove the side muscle if still attached.

  2. 2

    Marinate the Scallops

In a bowl, mix together olive oil, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Add the scallops to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.

Breading Process

  1. 3

    Prepare the Breading Stations

In one shallow dish, place the all-purpose flour. In a second dish, whisk together the egg and water. In a third dish, add the panko breadcrumbs.

  2. 4

    Bread the Scallops

Take each marinated scallop, coat it in flour, dip it in the egg mixture, and then roll it in the panko breadcrumbs until fully coated.

Frying the Scallops

  1. 5

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Scallops

Carefully add the breaded scallops to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

  3. 7

    Drain the Scallops

Use a slotted spoon to transfer the fried scallops to a paper towel-lined plate to drain excess oil.

Serving

  1. 8

    Plate the Scallops

Arrange the crispy smoked scallops on a serving platter and serve immediately with lemon wedges and your favorite dipping sauce.
