Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir gently until melted and smooth. Remove from heat and set aside to cool slightly.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Add the melted chocolate mixture and vanilla extract, stirring until well combined.

    Beat Egg Whites

    In a clean bowl, using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form. This will take about 3-5 minutes.

    Fold Mixtures Together

    Gently fold the beaten egg whites into the chocolate mixture in three additions. Be careful not to deflate the egg whites.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

    In a chilled mixing bowl, pour the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat the cream until soft peaks form, about 2-3 minutes.

    Once the mousse has set, remove from the refrigerator. Top each mousse serving with a dollop of whipped cream before serving.
