Preparation of Fish

Cut the Fish

Cut the fresh fish into small, bite-sized cubes, approximately 1/2 inch in size. Make sure to remove any skin and bones.

Marinate the Fish

Place the cubed fish in a glass or ceramic bowl. Pour the fresh lime juice over the fish, ensuring it is fully submerged. Allow the fish to marinate for about 30 minutes or until the fish is opaque and firm.

Chop Vegetables

While the fish is marinating, finely chop the red onion, jalapeño pepper (removing seeds for less heat if desired), and cilantro.

Combine Marinade

Once the fish is opaque, drain a small amount of the lime juice, leaving some to keep the ceviche moist. Add the chopped red onion, jalapeño, cilantro, and salt to the fish. Toss gently to combine.

Serve Ceviche

Spoon the ceviche into serving bowls and serve chilled with tortilla chips on the side for dipping.
