Preparing the Marinara Sauce

    Sauté the Garlic

    In a medium saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer and cook for about 20 minutes, stirring occasionally.

    Finish the Sauce

    Remove from heat and stir in the chopped basil. Adjust seasoning to taste and set aside.

Frying the Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat dry with paper towels. This step is crucial for achieving a crispy texture.

    Make the Breading Mixture

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Coat the Calamari

    Soak the calamari rings in buttermilk for about 15 minutes. Then, remove them from the buttermilk and dredge them in the flour mixture until fully coated.

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the calamari in batches, being careful not to overcrowd the pot, for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
