Beef

Method

Prepare the Beef

  1. 1

    Season the Beef

Sprinkle the Canadian beef tenderloin with salt and black pepper on all sides.

  2. 2

    Sear the Beef

In a skillet over high heat, add vegetable oil. Once hot, sear the beef tenderloin for 1-2 minutes on each side until browned but rare inside.

  3. 3

    Chill the Beef

Remove the beef from the skillet, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

  4. 4

    Slice the Beef

Once chilled, use a sharp knife to slice the beef thinly against the grain.

Prepare the Ginger Ponzu Sauce

  1. 5

    Mix Ingredients

In a bowl, combine soy sauce, fresh lime juice, rice vinegar, grated ginger, and mirin. Whisk until well combined.

  2. 6

    Add Green Onions

Stir in the chopped green onions into the ponzu sauce.

Assemble the Dish

  1. 7

    Plate the Dish

On a serving platter, arrange the mixed greens as a bed.

  2. 8

    Add Beef Slices

Place the thinly sliced beef tenderloin over the mixed greens.

  3. 9

    Drizzle Sauce

Generously drizzle the ginger ponzu sauce over the beef slices.

  4. 10

    Garnish

Sprinkle with sliced green onions and sesame seeds, if desired.
