Preparation of Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.

    Season the Rice

    In a small bowl, whisk together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from the heat and let it sit covered for 10 minutes. Then transfer to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Assembling the Rolls

    Prepare the Nori

    Place a bamboo sushi mat on a flat surface. Lay one nori sheet shiny side down on the mat.

    Add the Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Arrange slices of salmon, avocado, and cucumber horizontally across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Slice the Rolls

    Using a sharp knife, slice the roll into 6-8 pieces. Wet the knife in between cuts to prevent sticking.

Serving

    Prepare the Sauce

    Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
