Burger Patties

1. Form Patties

Place the ground beef in a mixing bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently mix with your hands or a fork until just combined — do not overwork. Divide the meat into 4 equal portions (about 4 oz each for thinner patties or 1 lb yields 2 larger patties; adjust if you prefer 2 larger burgers). Form each portion into a patty about 3/4 inch thick with a slight dimple in the center to prevent doming during cooking.

2. If making 4 patties, chill them on a tray in the refrigerator for 15–20 minutes while you prepare the other components; this helps them hold shape on the grill or skillet.

3. Cook Bacon

Preheat a skillet over medium heat. Lay bacon slices in a single layer and cook, turning occasionally, until crisp and browned, about 6–9 minutes depending on thickness. Transfer to a paper-towel lined plate to drain excess fat. When slightly cooled, cut each slice in half if desired for easier stacking (you should have about 6 slices total).

4. Prepare Bleu Cheese

Crumble the bleu cheese and set aside in a small bowl. Reserve about 2 tablespoons to sprinkle on the finished burger, using the rest to top the patties just before removing them from heat so the cheese softens and melts slightly.

Special Sauce

5. Make the sauce while bacon cooks. In a small bowl combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, hot sauce (if using), salt, and black pepper. Whisk until smooth. Taste and adjust seasoning — add more vinegar for tang, more relish for sweetness, or more hot sauce for heat. Refrigerate until ready to assemble.

6. Prepare vegetables: Slice the tomato into 1/4-inch thick rounds. Thinly slice the red onion into rings and separate. Pat lettuce leaves dry and keep chilled. If using pickles, have them ready.

7. Toast Buns

Heat a clean skillet or griddle over medium-high heat. Spread softened butter on the cut sides of the buns. Place buns cut-side down on the hot surface and toast until golden and lightly crisp, about 1–2 minutes. Keep warm.

Finishing & Assembly

8. Cook the patties: Heat a skillet or grill to medium-high and brush with the oil to prevent sticking. Place the patties on the hot surface with the dimple side up. Cook 3–4 minutes without moving for a nice sear. Flip and cook another 3 minutes for medium (adjust time for thickness and desired doneness).

9. Add bleu cheese: About 1 minute before the patties are done, divide the crumbled bleu cheese evenly on top of each patty (use the reserved 2 tablespoons for final garnish). Cover the skillet briefly with a lid or a piece of foil to help the cheese soften and adhere to the patty, about 30–60 seconds.

10. Assemble the burgers: Spread about 1 tablespoon of special sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then the bleu-topped patty. Top each patty with 1–2 slices of cooked bacon (arrange to cover the cheese), a tomato slice, a few rings of red onion, and pickles if using. Spoon a little extra sauce on the top bun (or spread thinly) and place bun top on the burger.

11. Serve: Insert a toothpick or skewer if needed to hold the burger together. Serve immediately with fries or a side salad.
