Pickle the Onions
Thinly slice the red onion and place in a bowl. In a separate bowl, mix rice vinegar with a pinch of salt. Pour over the onions and let sit for at least 30 minutes.
Cook the Forbidden Rice
Rinse the forbidden rice under cold water. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for about 30-35 minutes until tender. Fluff with a fork.

Plate the Dish
On each plate, place a serving of forbidden rice, top with sautéed baby bok choy, and add the grilled swordfish. Drizzle with green harissa and top with pickled onions and fresh cilantro.
