In a large pot, heat the water to around 65°C (149°F). Add the barley malt and roasted barley, stirring well. Maintain this temperature for about 60 minutes to convert the starches into fermentable sugars.

Mashing

After mashing, transfer the mixture to a lauter tun to separate the liquid wort from the solid grain. Rinse the grains with hot water to extract as much sugar as possible.

Lautering

Bring the wort to a boil and add the hops. Boil for approximately 60 minutes, stirring occasionally. This step adds bitterness and flavor to the beer.

Boiling

After boiling, cool the wort rapidly to around 20°C (68°F) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel with an airlock and allow it to ferment for 1 to 2 weeks at a stable temperature.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and let them carbonate for an additional 1 to 2 weeks.
