Preparation of Octopus

Clean the Octopus

Rinse the octopus under cold water and remove the beak and ink sac if necessary.

Boil the Octopus

In a large pot, bring water to a boil. Add the octopus and cook for about 45 minutes, or until tender. Remove and let cool.

Marinate

Once cooled, cut the octopus into tentacles. Marinate with olive oil, ras el hanout, and salt for at least 30 minutes.

Grill the Octopus

Preheat the grill to medium-high heat. Grill the octopus for about 3-4 minutes per side until charred.

Prepare Cilantro Pistou

Blend Ingredients

In a food processor, combine cilantro leaves, garlic, lemon juice, olive oil, and salt. Blend until smooth.

Serving

Plate the Dish

Spread a layer of hummus on a large serving plate. Arrange the grilled octopus on top, add pickled onions, and drizzle with cilantro pistou. Garnish with sliced radish.
