In a large pot, heat 15 liters of water to approximately 70°C (158°F).

Prepare the Brew

Add 3 kg of Pilsner malt and 0.5 kg of Caramel malt to the heated water. Stir well and maintain the temperature for 60 minutes.

Mashing

After mashing, sparge with hot water to collect around 20 liters of wort.

Sparging

Bring the wort to a boil. Add 100 grams of Cascade hops and boil for 60 minutes. In the last 15 minutes, add 50 grams of Citra hops and 50 grams of Simcoe hops.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cooling

Transfer the cooled wort to a fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment for 5-7 days at room temperature.

Fermentation

Once fermentation is complete, add 100 grams of priming sugar to the beer and bottle it. Seal the bottles and let them carbonate for an additional 1-2 weeks.

Bottling

Once carbonated, chill the bottles and enjoy your non-alcoholic IPA!
