Activate yeast
Pour 1 cup of warm water (105–115°F / 40–46°C) into a medium bowl. Stir in 2 tsp active dry yeast and 2 tbs granulated sugar. Let sit 5–10 minutes until foamy and fragrant.
Mix dough
In a large bowl or the bowl of a stand mixer fitted with the dough hook, combine 3.5 cups all-purpose flour and 1 tsp fine sea salt. Add the foamy yeast mixture and 4 tbs melted cooled butter. Mix on low until a shaggy dough forms, then increase speed to medium and knead 5–7 minutes until smooth, elastic, and slightly tacky. If dough is too sticky, add up to 2 tbs more flour, 1 tablespoon at a time.

Preheat and prep
Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper and set aside. Place a large, wide saucepan on the stove and add 10 cups water and 2 tbs baking soda; bring to a gentle boil, then reduce to a low simmer. Keep the baking soda bath at a very gentle simmer — not a rolling boil.
Shape bites
Turn risen dough out onto a lightly floured surface and divide into 12 equal portions. Roll each portion into a 6–8 inch rope, then cut each rope into 6 even pieces to make about 72 bite-sized pieces (adjust quantity if you prefer larger bites). Roll each piece into a smooth ball by cupping your hand and rolling on the counter to create surface tension.
Baking soda dip
Working in batches of 12–18 pieces, gently place the pretzel bites into the simmering baking soda bath for 20–30 seconds — flip once so each side gets briefly submerged. Use a slotted spoon to transfer the bites to the prepared parchment-lined baking sheets, spacing them about 1 inch apart.

Bake in the preheated 425°F (220°C) oven for 10–12 minutes, rotating the pans halfway through, until the pretzel bites are deep golden brown on top with a slightly darker base. Smaller bites may be done in 8–10 minutes; larger ones may need up to 13 minutes.

Serve warm with mustard, cheese sauce, or your preferred dip. Pretzel bites are best eaten the same day; reheat gently in a 350°F (175°C) oven for 5–7 minutes to refresh.
