Prep Beans

If using dried cooked beans: reserve about 1 cup of their cooking liquid and measure 3 cups of cooked beans. If using canned: drain and rinse until the water runs clear, then measure 3 cups and reserve up to 1 cup of the canned liquid. Set aside.

In a heavy skillet or sauté pan set over medium heat, warm 2 tbs vegetable oil (or lard) and 1 tbs butter until shimmering and butter is melted.

Add the measured beans to the pan and stir to coat in the fat. Let beans cook, stirring occasionally, for 2 minutes to warm through.

Using a sturdy potato masher or the back of a large spoon, begin mashing the beans in the pan. For a smoother texture, continue mashing and pressing until most beans are broken down; for chunkier refried beans, leave some whole. Add reserved bean liquid or broth, a little at a time (about 1/2 cup to start), to reach desired consistency.

Continue cooking, stirring and pressing the beans against the pan, for 6–8 minutes so excess moisture evaporates and flavors concentrate. Add additional bean liquid or broth as needed to keep them creamy.

Season with 1 tsp kosher salt and 1 tsp ground black pepper, tasting and adjusting salt as needed.

Aromatics & Flavoring

While beans warm in the pan (or in a separate skillet), heat a small skillet over medium heat with a teaspoon of the cooking fat from earlier if available. Add the finely chopped onion and cook, stirring occasionally, until softened and translucent, about 5–7 minutes.

Add the minced garlic and minced jalapeño (if using) and cook 30–60 seconds until fragrant, taking care not to brown the garlic.

Stir in 1 tsp ground cumin, 1 tsp chili powder and 1 tsp smoked paprika. Cook spices with the aromatics about 30 seconds to bloom their flavor.

Transfer the sautéed aromatics and spices into the mashed beans and stir thoroughly to combine. Add 1 tbs fresh lime juice and mix. Adjust texture with the reserved bean liquid or broth if the mixture is too thick.

Taste beans and adjust seasoning: more salt, pepper, or lime as desired. If you want a richer finish, stir in the optional shredded cheese while the beans are hot so it melts through (about 1/2–1 cup depending on preference).

Transfer refried nacho beans to a serving bowl or an oven-safe dish if you plan to broil with extra cheese. Garnish with chopped cilantro and sliced green onions. Serve with hot sauce or salsa on the side.

Storage: Cool to room temperature, then refrigerate in an airtight container for up to 4 days or freeze up to 3 months. Reheat gently in a skillet with a splash of reserved bean liquid or broth to restore creaminess.
