Soak breadcrumbs

In a small bowl, combine the fresh breadcrumbs and milk. Let sit 5 minutes until the crumbs absorb the milk and become pasty.

Mix ingredients

In a large mixing bowl, add the ground beef, ground pork, soaked breadcrumbs, egg, minced onion, minced garlic, Worcestershire sauce, dry mustard, smoked paprika, kosher salt, black pepper, and chopped parsley. Using clean hands, gently mix until just combined. Avoid overworking to keep meatballs tender.

Form jumbo meatballs

Portion the mixture into 12 equal pieces (about 3 ounces / roughly 85 g each) and roll gently into round balls. Place on a tray or sheet pan lined with parchment.

Brown meatballs

Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. When oil shimmers, add meatballs in a single layer without crowding (work in batches if needed). Brown on all sides, turning with tongs, about 2–3 minutes per side until a deep golden crust forms. Transfer browned meatballs to a plate.

Combine glaze

In the same skillet (wipe out excess oil if there's too much), lower heat to medium and add ketchup, brown sugar, apple cider vinegar, soy sauce, honey, smoked paprika, garlic powder, onion powder, and red pepper flakes. Stir until combined.

Simmer to meld flavors

Bring glaze to a gentle simmer and cook 3–4 minutes, stirring frequently until sugar dissolves and sauce slightly thickens.

Finish glaze with butter

Remove pan from heat and stir in 1 tablespoon butter until glossy and fully incorporated. Taste and adjust seasoning (add a pinch of salt or more vinegar/honey to balance).

Coat meatballs

Return browned meatballs to the skillet with the warm glaze (or transfer glaze and meatballs to a baking dish). Spoon glaze over each meatball to coat thoroughly.

Bake to set (optional)

For a fully set glaze and even cooking, preheat oven to 350°F (175°C) and bake glazed meatballs in an oven-safe dish for 12–15 minutes, until cooked through (internal temp 160°F / 71°C). If not baking, continue to simmer gently in the skillet for 5–7 minutes, turning occasionally, until cooked through.

Garnish and serve
