Hot Honey (make first, optional if using store-bought)
Infuse honey
Combine honey, red pepper flakes, apple cider vinegar, optional crushed chile paste (or minced fresh chile), and a pinch of salt in a small saucepan.
Warm gently over low heat — do not boil — stirring frequently for 4–6 minutes until the honey thins slightly and the chile flavors bloom.
Remove from heat and let steep 20 minutes for more heat. Strain through a fine mesh if you used fresh chile or larger flakes. Transfer to a jar; reserve 3 tablespoons for the pizza. (Makes extra — refrigerate up to 1 month.)
Assemble & Bake
Preheat
Place a pizza stone or inverted baking sheet on the middle rack and preheat oven to 500°F (260°C) for at least 30 minutes. If using a home pizza oven, preheat according to manufacturer instructions.
Prepare dough
On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round, leaving a slightly thicker rim. Transfer to a lightly floured pizza peel or parchment-lined sheet for easier transfer.
Sauce & cheese
Spread 3 tablespoons of pizza sauce evenly over the dough, leaving a 1/2-inch border. Sprinkle shredded mozzarella evenly, then dust with grated parmesan and 1 teaspoon red pepper flakes for an extra kick.
Add pepperoni
Arrange the pepperoni slices in a single layer, slightly overlapping if desired. For crispier pepperoni cups, place a second slice over each and press lightly.
Bake
Slide the pizza onto the preheated stone or baking sheet. Bake for 8–12 minutes at 500°F (260°C), or until the crust is golden and cheese is bubbly and slightly browned. If your oven is cooler, bake 12–15 minutes and watch for doneness.
Finish with hot honey
Remove pizza from oven and let rest 1–2 minutes. Drizzle 2–3 tablespoons of hot honey evenly over the pizza, concentrating slightly on the pepperoni. If you prefer more heat or sweetness, add more to taste.
Garnish & serve
Scatter fresh basil leaves over the pizza, slice into 8 pieces, and serve immediately. Offer extra hot honey at the table.
