Prepare beef

Place ground beef in a bowl. Add kosher salt, freshly ground black pepper and Worcestershire sauce. Gently mix with your hands or a fork until combined, taking care not to overwork the meat (mix just until ingredients are distributed). Divide into 4 equal portions (about 4 oz each). Form each portion into a loose patty about 3.5 inches (9 cm) across and 3/4 inch thick; make a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Cook patties

Heat a large skillet or cast-iron pan over medium-high heat until hot. Add vegetable oil and swirl. Add patties, leaving space between them. Cook undisturbed 3 minutes until a brown crust forms. Flip and immediately place one slice of cheese on each patty. Reduce heat to medium and cook another 2-3 minutes for medium doneness (adjust time for preferred doneness). If cheese needs melting more, cover pan for 30–45 seconds. Remove patties to a plate and rest 2 minutes.

While patties cook, slice the tomato into 1/4-inch slices. Thinly slice the red onion into rings. Rinse and pat dry the lettuce leaves; choose the largest intact leaves, trimming the thick stem area if needed so they fold easily. Set tomato, onion and pickles aside on a serving platter.

Sauce

Make the All-American burger sauce by combining mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, salt and black pepper in a small bowl. Stir until smooth and taste; adjust salt or vinegar as desired. Refrigerate sauce until ready to assemble.

Assembly & finish

If you like a warm, slightly toasted wrap, heat a clean skillet over medium and add butter. Quick-sear each lettuce leaf 5–8 seconds per side, just until edges wilt slightly; remove and cool. (Optional step.)

To assemble each lettuce-wrapped All-American burger: lay one lettuce leaf flat. Spread about 1 tablespoon of sauce across center of the leaf. Place a cheese-topped patty on the sauce. Top the patty with 1 tomato slice, a few onion rings, and 2 pickle slices. Add hot sauce if using. Fold lettuce around the patty like a taco or wrap and serve immediately. Repeat for remaining patties.

Serve with extra sauce on the side and any desired sides (fries, slaw or a simple salad).
