Burger
1. Prepare Patties
Divide the 1 lb ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a 3/4-inch thick patty, making a slight dimple in the center with your thumb to reduce puffing as they cook. Do not overwork the meat. Season both sides of each patty with kosher salt (use about 1/4 tsp per side) and 1/8 tsp black pepper per side. Lightly brush both sides with a little vegetable oil.
2. Cook Patties
Heat a large cast-iron skillet or heavy pan over medium-high heat until hot (about 2–3 minutes). Add 1 tsp vegetable oil and swirl to coat. Place patties in the pan leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip and immediately add a slice of cheddar to each patty. Cook 3 more minutes for medium or until internal temperature reaches 160°F (71°C) for well-done. If you prefer a different doneness, adjust time accordingly. Remove patties to a plate and tent with foil to rest 3–5 minutes.
3. Toast Buns
While patties rest, spread softened butter evenly on cut sides of the 4 buns. Return the skillet to medium heat and place buns cut-side down for 1–2 minutes until golden and lightly crisp. Remove from heat.
4. Assemble Burgers
On the bottom half of each bun, place a lettuce leaf, a cooked beef patty with melted cheese, 2 pickle slices, 2–3 tomato slices, and a few onion rings. Spread mayonnaise, ketchup, or mustard on the top bun as desired. Close burger and serve immediately.

5. Prepare Potatoes
Wash and peel the 2 russet potatoes if desired. Cut potatoes into 1/3-inch thick sticks for classic fries. Place cut fries into a large bowl of cold water and soak for at least 15 minutes (or up to 1 hour) to remove excess starch—this helps them crisp. Drain and pat thoroughly dry with clean kitchen towels or paper towels.
6. Fry Potatoes
In a heavy-bottomed pot or deep skillet, heat 2 cups vegetable oil to 325°F (162°C) for the first fry. Working in batches, add fries without overcrowding and fry 3–4 minutes until soft but pale. Remove to a wire rack or paper towels to drain. Increase oil temperature to 375°F (190°C). Return fries in batches and fry 1.5–3 minutes until golden and crisp. Remove and drain on paper towels.
7. Season Fries
While still hot, sprinkle fries with 1 tsp kosher salt, 1/2 tsp paprika, and 1/4 tsp garlic powder; toss gently to coat. Serve immediately alongside burgers.
Optional Sauce & Condiments
8. Combine 2 tablespoons mayonnaise, 2 tablespoons ketchup, 1 teaspoon mustard and 1 teaspoon hot sauce in a small bowl and mix until smooth. Taste and adjust seasoning. Serve in a ramekin for dipping fries or spread on buns as desired.
Drink
9. Fill two tall glasses with 4 ice cubes each. Pour 2 cups chilled cola into each glass (total 4 cups). Garnish with a lemon or lime wedge if desired. Serve immediately with the burger and fries.
