Sandwich

Drink (Iced Tea)

Method

Sandwich

  1. 1

    Toast muffin and butter

Split the English muffin and toast both halves until golden. Spread the unsalted butter evenly on the cut sides and set aside, toasted-side up.

  2. 2

    Prepare egg ring

Lightly coat a 3-inch metal or silicone egg ring (or small round cookie cutter) with 1/2 tsp vegetable oil or nonstick spray to prevent sticking. Heat a nonstick skillet over medium-low heat.

  3. 3

    Cook eggs

Crack the first egg into a small bowl, then gently pour it into the prepared ring in the skillet. Repeat with the second egg so both cook side-by-side within the ring (or crack both directly if using two rings). Season with 1/8 tsp salt and a pinch (about 1/16 tsp) of black pepper. Cover the skillet with a lid and cook 2–3 minutes until whites are set but yolks are still slightly soft (or longer, 4–5 minutes, for fully set yolks). If you prefer a single folded-style round egg, whisk the two eggs together in the bowl with salt and pepper before pouring into the ring and cook the same way.

  4. 4

    Assemble sandwich

Place the cheese slice on the bottom toasted muffin half. Using a spatula, transfer the cooked egg(s) onto the cheese so residual heat melts it slightly. Top with the other muffin half and press gently. If you like the sandwich warmer and the cheese more melted, wrap it in foil and hold for 1–2 minutes or briefly place in a 300°F (150°C) oven for 3 minutes.

Fries

  1. 5

Preheat oven to 425°F (220°C). Spread the 4 oz frozen shoestring fries in a single layer on a baking sheet. Lightly brush or mist with 1 tbsp vegetable oil. Bake 12–16 minutes, turning once halfway, until golden and crisp. Remove from oven, immediately season with 1/4 tsp salt, and toss gently to coat.

  2. 6

    Pan-fry method (alternative)

Heat 1–2 tbsp vegetable oil in a large skillet over medium-high. Add fries in a single layer and cook, turning occasionally, until golden and crisp, about 6–10 minutes depending on thickness. Drain on paper towels and season with 1/4 tsp salt.

Drink (Iced Tea)

  1. 7

    Brew tea

Steep 1 black tea bag in 8 oz hot water for 3–4 minutes for medium strength. Remove and discard the tea bag. Stir in 1 tsp simple syrup or sugar until dissolved. Let cool slightly.

  2. 8

    Serve over ice

Fill a tall glass with 1 cup ice. Pour the brewed tea over the ice. Garnish with a lemon wedge if desired and serve alongside the sandwich and fries.
