    Cook aromatics

    Heat 1 tablespoon vegetable oil in a medium saucepan over medium heat. Add the finely chopped onion and cook until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Brown beef

    Add the ground beef to the pan. Break it up with a spoon and cook until no longer pink, about 6–8 minutes. Drain excess fat if necessary.

    Simmer chili

    Stir in tomato paste, tomato sauce, and beef broth. Add chili powder, ground cumin, paprika, brown sugar, salt, and black pepper. Bring to a gentle simmer, then reduce heat to low and simmer uncovered for 15–20 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning.

    Prepare potatoes

    Preheat oven to 425°F (220°C) if roasting. Pat the cut potatoes dry with paper towels to remove excess moisture.

    Cook fries

    For oven fries: toss potatoes with 2 tablespoons vegetable oil, 1 tsp salt, 1/4 tsp black pepper and 1/2 tsp paprika on a rimmed baking sheet in a single layer. Roast for 25–30 minutes, flipping once halfway, until golden and crisp. For pan-fry: heat 2 tablespoons oil in a large skillet over medium-high heat and cook fries in batches until golden, about 8–12 minutes per batch. Drain on paper towels and season immediately with salt.

Hot Dogs & Assembly

    Cook hot dogs

    Heat a grill or skillet over medium-high heat. Score the hot dogs lightly if desired. Grill or pan-sear them for about 4–6 minutes, turning occasionally, until browned and heated through. You may also simmer them in water for 5 minutes then brown briefly.

    Toast buns

    Lightly butter the inside of the buns (optional) and toast on the grill or in a skillet for 1–2 minutes until just golden.

    Assemble chili dogs

    Place a cooked hot dog into each toasted bun. Spoon 1/4 to 1/3 cup of the prepared chili over each hot dog. Sprinkle shredded cheddar cheese and diced raw onion over the chili. Add mustard if using.

    Plate with fries

    Divide the fries among four plates. Place a chili dog on each plate alongside the fries. If desired, spoon a little extra chili onto the fries for chili fries.

Drink (Simple Soda Shaker)

    Mix drink

    In a cocktail shaker or jar, combine fresh lime juice and simple syrup with ice. Shake or stir briefly to chill. Pour into two tall glasses filled with ice, top with 1 cup club soda each (2 cups total), stir gently, and garnish with lime wedges. Serve two drinks or split among four small glasses as desired.
