Prep the potatoes
Wash and peel (optional) the russet potatoes. Cut into 1/4"–1/2" thick fries (or use a fry cutter). Place cut fries in a large bowl of cold water and soak 30 minutes to remove excess starch. After soaking, drain and pat very dry with clean kitchen towels or paper towels.

Preheat oil
Pour 3–4 cups vegetable oil into a deep pot or Dutch oven (enough for 2–3" depth). Heat over medium-high to 325°F (163°C) for the first blanch fry. If you don't have a thermometer, heat until a small piece of fry slowly bubbles.

Blanch fry
Working in batches, fry the dried potatoes at 325°F for 3–4 minutes until pale and slightly softened but not browning. Remove with a slotted spoon to a wire rack or paper towel-lined baking sheet. Increase oil temperature to 375°F (190°C) after all batches are blanched.

Crisp fry
Return blanched fries to the hot oil in batches and fry at 375°F for 2–3 minutes until golden and crisp. Season immediately with 1 tsp salt and 1/2 tsp black pepper (reserve remaining salt/pepper for beef if desired). Transfer to a paper-towel lined tray or wire rack and keep warm in a 200°F (93°C) oven if needed.

Cook the beef and aromatics
While fries are frying, finely dice the yellow onion. Heat a skillet over medium-high heat (no additional oil needed if meat is 80/20). Add the ground beef and the diced onion to the skillet. Break beef into small pieces with a spatula and cook 6–8 minutes until browned and cooked through. Season the beef with 1/2 tsp salt, 1/2 tsp black pepper, and 1 tsp garlic powder during cooking. Taste and adjust seasoning.

Assemble with cheese
Arrange the hot fries on a large serving platter or individual plates. Evenly distribute the cooked ground beef over the fries. Sprinkle 2 cups shredded cheddar across the fries and beef. If you want extra melt, tear the 4 American cheese slices into pieces and place on top as well. Place the platter into a warm oven (200°F / 93°C) for 2–3 minutes or cover loosely with aluminum foil for 1–2 minutes until cheeses are melted.

Finish and garnish
Top the melted-cheese fries with sliced dill pickles and optional pickled jalapeño slices. Drizzle ketchup (4 tbs), mustard (2 tbs), and spoon mayonnaise (4 tbs) either in lines across the pile or serve on the side. Sprinkle chopped fresh parsley if using. Serve immediately so fries remain crisp and cheeses warm.

Make simple syrup (if not pre-made)
In a small saucepan combine 1 cup sugar and 1 cup water. Heat gently, stirring until the sugar dissolves. Remove from heat and cool to room temperature. (If you already have simple syrup, skip this step.)

Mix lemon soda
In a pitcher combine 1 cup fresh lemon juice and 1 cup cooled simple syrup. Add 4 cups chilled club soda and gently stir once to combine. Taste and adjust sweetness by adding more simple syrup or a little water if too strong.
