1. Prepare tortillas
Preheat oven to 350°F (175°C). Lightly brush both sides of the mini tortillas with the vegetable oil or very lightly spray with cooking spray. Place them on a baking sheet in a single layer and warm for 3–4 minutes until pliable but not crispy. Remove and keep warm wrapped in a clean towel.
2. Cook filling
Heat a medium skillet over medium-high heat. Add the ground beef and use a spatula to break it up. Cook 3–4 minutes until it starts to brown. Add the chopped onion and continue cooking 2–3 minutes until the onion softens. Stir in the minced garlic and cook 30 seconds until fragrant.
3. Season meat
Reduce heat to medium. Sprinkle the taco seasoning over the meat, add the 1/4 cup water, and stir to combine. Simmer 2–3 minutes until the sauce thickens and coats the meat. Taste and season with the 1/4 tsp salt and 1/8 tsp black pepper as needed. Remove from heat.
4. Assemble tacos
Arrange the warmed tortillas on a clean work surface. Distribute the seasoned ground beef evenly among the 10 tortillas (about 1.6 tablespoons or roughly 1.5 teaspoons of meat per taco). Top each with a pinch of shredded cheese so it melts slightly from the warm meat, then add a small bit of shredded lettuce and a few diced tomatoes to each taco.
5. Garnish
If desired, add a few pickled jalapeño slices to some tacos for heat and sprinkle chopped cilantro across all tacos. Serve with the lime wedges for squeezing over the top.
6. Serve with beer
Serve the 10 mini tacos immediately while warm alongside 1 chilled Coors beer per person (or as many as desired). Enjoy responsibly.
