Prepare the Broth
In a saucepan, heat the vegetable broth over low heat and keep it warm.
Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
Toast the Rice
Add the Arborio rice to the skillet and stir for 2-3 minutes until the rice is lightly toasted.
Add Wine
Pour in the white wine and stir until it is mostly absorbed by the rice.
Cook the Risotto
Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more broth. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
Incorporate Beets and Cheese
Stir in the cooked and diced red beets, crumbled goat cheese, and grated Parmesan cheese. Mix until the cheeses are melted and well combined.
Season and Serve
Season with salt and black pepper to taste. Garnish with chopped fresh parsley before serving.
